To make pitta bread we need
Ingredients
2 1/2 cups of all purpose flour extra for dusting
1 teaspoon salt
1 teaspoon sugar
2 teaspoon instant yeast
1 tablespoon olive oil.
1 cup warm water(around 110°F/43°c)
Method
1.Activate the yeast
In a small ball combine the warm water,sugar,and yeast.stir it gently let it sit for 5 to 10 minutes until frothy.this step ensures that pitta bread rise properly.
2. Prepare the dough
In a large bowl mix the flour and salt
Create a well in the centre,pour in the yeast mixture and olive oil. Stir with a wooden spoon until a shaggy dough forms.
3. Knead the dough
Transfer the dough into the floured surface.Knead 8 to 10 minutes until smooth and elastic,if yiu with you can use tge standard mixer with a dough hook for 5 minutes
4.First rise
Placed the dough in the lightly oiled bowl,cover with a damp cloth,let it se 1-2 hours in the warm place until doubled in size
5.Shape the pitta
Punch down the dough divide into 8 equal pieces,roll each piece into a ball then flatten into 1/4 inch thick circles using rolling pin.
6.Cook the pitta
Option 1
Pre-heat oven 245 °C (475°F) place a baking tray or a baking stone inside.
Once hot place 2 to 3 pittas at a time bake for 2 to 3 minutes untill they puff up.
Option 2
Stove top
Heat a heavy skillet over medium-high heat.cook each pitta for 1-2 minutes on each side untill puffed slightly golden.

Warm water
Don't over work the dough after it rises other wise it wont puff up nicely.
Bake in a very hot oven to ensure the classic pocket forms.
