Kabsa (Arabic chicken and Rice)

Here is the flavourful and authentic kabsa (Arabic chicken and rice) recipe a popular middle eastern main dish thats perfect for family meals and gatherings.

Chicken kabsa recipe 

Ingredients 

For the chicken 

1 whole chicken cut into pieces or 1 kg chicken 

2tbsp vegetable oil

1 onion finely chopped

4 garlic cloves minced

2 tomato finely chopped

2 tbsp tomato paste

1 large carrot grated 

1 green chilly slit (optional)

Salt to taste 

Kabsa spices 

1tsp black pepper

1tsp cumin

1tsp coriander powder 

1tsp cinnamon 

1 tsp coriander powder

1 tsp turmeric 

1tsp cardamom 

1/2 cloves

1/2 tsp ground nutmeg 

Dried black limes loomi pierced with knife

For the rice

2 cups of basmati rice rinse and soaked for 30 minutes

4 cups chicken broth from cooking the chicken

Raisin and roasted almonds for garnishing

Method

Heat oil in a large pot,add chicken pieces and brown on all sides remove znd set a side.

Saute veggies

In the same pot  add onions, garlic, and sauté until golden. Add tomatoes, tomato paste, carrots, and green chili. Cook until soft.

Add all kabsa spices and dried lime  mix well and cook for 1-2 minutes 

 Simmer the chicken:

Add the chicken back in, pour water to cover, and simmer covered for 30–40 minutes until the chicken is fully cooked. Remove chicken and set aside. Save the broth.

5. Cook the rice:

Measure 4 cups of the chicken broth. Add soaked rice into the pot with the broth. Cook covered on low heat until the rice is fluffy and liquid is absorbed (about 20 minutes).

6. Grill the chicken (optional):

For a crispy finish, place chicken pieces under the grill for 5 minutes.

Serving suggestion 

Fluff the rice, top with chicken, and garnish with raisins and toasted almonds.
