Maqluba (Upside-Down Rice with Meat &Vegetables)


Maqluba literally means upside down and its exactly tgat layers of meat vegetables,and rice cooked together in one pot .tgen flipped onto a platter for a stunningreveal.its one pot wonder that brings barakah to the table and joy to hearts.

Ingredients (serves 6)

For the meat 

500g lamb or chicken with bone preffered 

For flavour.

1 onion,halved

2 bay leaves

4-5 black k peppercorns 

Salt to taste

Vegetables (fried or air fried)

1large egg plant aur aubergine sliced into rounds

2 potatoes,sliced

1 small cauliflower cut into florets

Carrots and bell peppers (optional)

Rice

2 cups basmati soaked for 30 minutes 

1 tsp mixed spice (bharat)

1 tpsp cinnamon 

1 tpsp turmeric

Salt to taste

3 cups meat broth (from cooking the meat) 

Method

1.Cook the meat

In a large pot boil the mear with onion bay leaves peppercorns and salt for 30 to 40 minutes

Untill tender.skim foam as it forms.strain and reserve the broth

2.Prepare and fry the vegetables 

Lightly salt and fry or air fry tge eggplant potato and cauliflower until golden.set on paper towels to absorb excess oil 

3.layer the Maqluba

In a deep non stick pot,layer as follows:

1.Meat (at the bottom)

2.vegetables

3.Drained rice and sprinkled with spices

Gently pour 3 cups of warm broth over the rice.

The liquid should be just enough to cover the rice.

Add more hot water if needed.

 4.Cook it

Bring to a boil,then lower heat to minimum

Cover tightly and cook for 30_40 minutes untill rice us fully cooked.

 Let rest for 10 minutes with the lid on.

5.Flip it!

This part is interesting,

Place a large flat tray over the pot.Take a deep brea6and flip the pot quickly but Carefully.

Tap tge bottom,then slowly lift to reveal the layered beauty.

Serve With:

Plain yogurt or cucumber yogurt salad

Simple Arabic salad with lemon-olive oil dressing.
